Soundproofing Solutions

Hi, I live in an old 1848 log home. We are about to do some renovations and I would like to make an all purpose media room/home theatre. Obviously I would like to make it as sound proof as possible but also acoustically effective for a 7.1 surround system. The room will be roughly  
16'x13. I will have three newly constructed walls but one will be the outside original log wall roughly 10" thick.I also have an original ceiling that has 8" floor joists covered with 1" pine and then old ceiling tiles. I can remove the ceiling tiles but I may not want to disturb the wood. Could you recommend the most effective way to sound proof the original wall and the ceiling. Also withe the new walls I was planning on using a staggered 2 x 4 stud on a 2 x 6 plate and filling with roxul then using the clips you demonstrate. Do you feel one layer of 5/8 drywall will be sufficient or do I need two with green glue? Any input you have would be appreciated. The room is unfortunately located in the center of the house and I want to limit the amount of noise that escapes. Also, I am north of Peterborough ont. I just moved into a stacked townhouse which does not have a basement. The mechanical system for HVAC and laundry is on the main floor under the staircase. The HVAC system kicks in about 4 times every hour for about 5 minutes each time and it is very loud for a an open space layout of combined living/dining and kitchen space. The mechanical room has 2 swing doors. How can we soundproof this room? It is very small, just enough room for the water tank and washer and dryer.
